As directed by my naturopath, I’m starting up a new dietary plan. Essentially, I am on the Paleo diet (i.e. caveman diet) of meat, fish, vegetables, and fruits, with a few exceptions and additions. Although I miss eating certain things, it actually has been a lot easier to find things to eat with this diet. Before this new diet, I was attempting to avoid an ever-changing, increasingly-restrictive list of foods I thought might be causing my digestive system to get upset. As the days passed, it grew more and more difficult to find meals that would fit my list. It has been nice to toss that out the window and try something new.
This is one of the first recipes I made after switching to this new diet. Although this didn’t taste particularly like curry to me, it was an amazing dish that was full of sweetness and zest. I suppose you could make it have a stronger curry taste by adding more curry powder, but it tastes great as is. It has a wonderful “zesty sweet tomato-y apple” flavor.
My one note is be sure to cook the chicken while the curry is simmering for 35 minutes. I didn’t realize that the list of ingredients included COOKED chicken. I’ve never seen that one before… rather sneaky. So, it was a bit of a scramble at the end to get the chicken cooked before I added it to the curry.
