Well, it certainly has been a long time since my last post! I didn’t anticipate how expensive it can be to cook from recipes, especially when they require special spices, sauces, or other ingredients.
Life in 2012 has also been a tad bit busier than I was expecting. It has been a little hard to make the time to cook a new recipe, photograph it, and then blog about it. The good news is I’m not giving up! After today, I still have have about 9 months to get in another 48 recipes. I think it’s doable. I already have a couple recipes in various stages of the process. Some need to be re-cooked so I can photograph them. Others are already photographed and just need to be blogged.
So without further ado… Vegan Fajitas!
Back in January, a couple friends and I decided to make a vegan meal together. Both of the other girls had more experience eating vegan meals than I did, so I followed their suggestions. They thought it would be fun to do fajitas since the best vegan meals tend to be those with lots of fresh vegetables.
Step 1: Chop up the Ingredients
We used 1 white onion, 3 bell peppers (red, orange, & green), 1 tomato, 1 avocado, and a handful of cilantro.
Step 2: Smoosh the Beans (or use refried beans)
If you use dried beans, you will need to do some work to prepare them in advance. Fortunately we already had a bowl of precooked beans (a mix of pinto and black beans as I recall), so all we had to do was smash them all up. You could also use refried beans.
Step 3: Warm the Beans & Saute the Veggies
For the beans: put beans in a saucepan and heat on medium, stirring fairly often.
For the onions and peppers: add a small amount of oil to a skillet and set to medium high heat. Add onions. Add peppers. Stir frequently and cook until vegetables until their texture is somewhat soft. If you want them completely soft and limp, you will need to cook them longer.
Step 3: Heat Tortillas
Pre-heat oven to approximately 300 degrees. Place a handful of tortillas (we used corn tortillas) on a cookie sheet and put them in the oven for 5 minutes or so.
Step 4: Put It All Together
Place tortillas on a plate and add beans, pepper/onion mixture, tomatoes, cilantro, and avocado. We also added salsa. Feel free to add other things like lettuce, guacamole, or pico de gallo. If desired, squeeze a slice of lime over the fajitas. Enjoy!
I always thought vegan meals would be bland (vegan/vegetarian usually brings to mind that scene with Matthew McConaughey and Kate Hudson struggling to eat bowls of barley and bean sprouts in How to Lose a Guy in 10 Days), but these were really tasty! Even though I am usually a frequent egg, dairy, and meat eater, I would definitely make vegan fajitas again.
